Both variants are good. Second is a bad choice if you use GnuPG encryption.
I don't think this variant complies with the Jabber standards, I mean I don't think there's a JEP mentioning how partial messages should be sent.

"User is typing" is fine but I really don't like transmitting as things are typed. For one thing it's a hog on bandwidth and secondly I don't think it's (I hope it's not) feasible within jabber.

You're right, it would use too much bandwidth. 
I would keep it simple.

A 'User is typing' indication next to the cross that clears the text area would do for me.  Nothing too fancy...

Typing notifications *are* supported by XMPP. Exodus for example supports it and it's one of these features you only miss once you know them ;-).

As for bandwidth, of course it should be configurable (at least outgoing).

Besides, would it be feasible in Jabber ?

I think because Jabber wraps everything in a XML structure it will generate an enormous amount of traffic.. and it's a bit annoying that someone can see all your typos before you can edit them...

btw.. my first choice is MUC, i think it will get lots of IRC users to Jabber, because the conference room just can't replace an IRC box

None of the options on your list are my highest priority.

My highest is setting Priority in Away modes.  That means I can safely leave Psi logged in from work when I go home, and vice-versa, and any incoming messages will be routed to the one I'm actually using.

A few weeks ago, i asked on a jabber mailinglist if messages could be saved on the server when all clients are in away mode, and retrieved when another client comes online. This seemed to impose too much of a burden on the server. Another option could be to be able to share history files across clients.
I would also like a nice system for being able to safely leave my client at work, but unfortunately i don't see a solution in the near future :(

you can almost share history files across clients.
There is a script somewhere that will take multiple histories, and create one history with every message in.
I can't remember where it is tho, I wrote it a long time ago.
Has anyone got a copy?

Hmm. I think that would confuse real Jabber users ;). Maybe after the Jabber ID field, there should be a small text such as '(e.g: username@myjabberserver.org)'. That would solve a lot of problems, and at the same time learn people what a real JID is.
Another thing which might remove confusion is, when creating a profile, it should be clearly explained what a profile exactly is, that it can contain one or more jabber accounts, maybe even a short text on what accounts are. However, this still leaves room for confusion: the user still has to find out he has to first create a profile. Therefore, i still feel there should be a new user dialog, starting with a dialog asking you to create a new profile (or use an existing if there already is one), followed by adding an account to the profile. Shouldn't be too complicated.

I know of no "Real" Jabber users that would be confused by having a username part and a hostname/domain part.

I think the "Create profile" should be removed completely, in favour of the ICQ-style: Create a default profile and use it. (Possibly name it after the   first nickname defined under that profile)  Then, have the Psi->Change Profile be a Psi -> Change Profile->Profile list.
"Profile List" should (IMO) look similar to the "Group" dialog, with a list of profiles, plus "Create New".  Thus, if the user wants multiple profiles, (s)he can use them, but if they don't want them, they can just not use that option and safely ignore it.

That problem is already solved IMO: There is only one path to follow when the "Profiles" dialog first pops up.  However, I think that not requiring users to worry about profiles unless they want that feature (as described above) is a better solution.
